Eating Electricity

Those dan-dan noodles at the Szechuan Gourmet were so good that I hunted for hours for a recipe that looked similar, and finally found it — though I’ll use 4 T. of chili oil, just because, well, what’s the point if it’s not like eating electricity? I also ordered the cookbook it came from, and a Hunan cookbook from the same author, which Amazon tells me has shipped.

Off to grind the pork.
